If you’re looking to work lighter, healthier dishes into your daily routine, a good way to go is to take things you already like to eat, like, say, Asian style noodle dishes, and pump up the veggies and the flavors. It’ll be satisfying and delicious. In this class, Alyssa will start with a soba salad, topped with colorful greens, veggies and a lemon sesame vinaigrette with azuki bean croquettes. Next, we’ll make spiralized yam “noodles” with massaged kale and a garlicky cashew sauce and crunchy salad crumbles. Finally, Alyssa will keep it light with rice noodles topped with an Asian slaw tossed in an almond butter kaffir lime dressing.
