Main Course Salads – Aug 13 1:00 pm–4:00 pm

During the dog days of summer, sometimes all you want to eat is a big salad. And not just a bunch of chopped iceberg lettuce drowned in bottled dressing, we’re talking a big, hearty, tasty salad packed with good things. Alyssa will teach you how to make a Mexican corn salad with black beans, tomato, garlicky cilantro cucumber pickle and a cashew lime dressing; a forbidden rice salad with broccoli, spicy tofu cubes, and a lemongrass shallot dressing; and finally, a barbecue chickpeas and greens salad with avocado, tomatoes, spinach and creamy garlic dill dressing. Now that’s good eating!

Lately, Alyssa has been experimenting with updated versions of traditional South Pacific cuisine and she wants to share the results of her Pacific exploration with you. We’ll be making a coconut curry stew with breadfruit, taro and yambanana leaf wrapped bamboo ricetofu ika mata style (with onion, lemon, tomato and coconut cream), and finally, breadfruit chips with coconut spinach dip.

It can be kind of tough being a vegetarian in Hawaii who loves local kine foods. Just how can you get your flavor fix and keep it 100% healthy? Local girl Alyssa knows how! For this class you’ll learn how to make great tasting vegetarian versions of local favorites like: pokemusubi (with teriyaki tofu)loco moco (believe it or not)mochiko tofu, and a seriously amazing cauliflower “fried rice”. Chance’em, you’ll like it.

Totally Tofu – June 18 1:00 pm–4:00 pm

Tofu is dull. Tofu is boring. Wrong! Tofu is a blank canvas for you to do your culinary art upon. And culinary artist Alyssa is here to teach you how to combine tangy, zesty flavors with tofu to create wonderful meals! For example, she’ll show you how to make marinated tofu with wasabi cream sauce, a black bean salad with cilantro lime tofu crème with chipotle-maple tamari almonds. We’ll also make a nutritious and creamy Asian cucumber salad dressing, a tofu “omelet”, and then Alyssa will demonstrate how to make a coco-banana frozen dessert “pizza”.

Asian Noodles – 5/28

If you’re looking to work lighter, healthier dishes into your daily routine, a good way to go is to take things you already like to eat, like, say, Asian style noodle dishes, and pump up the veggies and the flavors. It’ll be satisfying and delicious. In this class, Alyssa will start with a soba salad, topped with colorful greens, veggies and a lemon sesame vinaigrette with azuki bean croquettes. Next, we’ll make spiralized yam “noodles” with massaged kale and a garlicky cashew sauce and crunchy salad crumbles. Finally, Alyssa will keep it light with rice noodles topped with an Asian slaw tossed in an almond butter kaffir lime dressing.

Vegetarian or not, home lunch needs lots of help. It’s so easy to get into a routine—which can be the death of healthy eating. Your taste buds get bored, lunch isn’t satisfying, and then you walk past the candy machine…

Alyssa is here to help!

She has spent years making lunches for her clients and has selected some simple and tasty lunch recipes that you can mix into your repertoire.

We’ll be making a chickpea “mock tuna” salad sandwich, an eggless “egg” salad (tofu) sandwich, a soba noodle stir-fried bento with creamy cashew sauce and cucumber ume pickle, and finally, a versatile tahini-carrot-olive spread that goes good on everything.
